Dr. Xu received his Ph.D in Food Science at Chungnam National University, South Korea and M.Sc. in Medicinal Chemistry from Jilin Agricultural University, China. He conducted postdoctoral research work in North Dakota State University, Purdue University, and Gerald P. Murphy Cancer Foundation during 2005-2009. Currently, he is a professor in Beijing Normal University-Hong Kong Baptist University United International College (UIC), Associate Director of UIC Key Lab -Laboratory for Health Promotion Mechanism of Medicinal Food and Folk Remedy, author of over 100 peer-reviewed papers. The overall goal of his research is to understand health promoting effects of phytochemicals. Specific interests includes 1) Health benefits (targeted at aging, cancers, obesity, and diabetes) assessment of phytochemicals from legumes, fruits, vegetables, traditional Chinese medicines; 2) Cellular and molecular mechanisms of bioactive food components in disease prevention; 3) Diet-gut microbe interactions and their effects on human health and disease. Dr. Xu is serving as an Associate Editor-in- Chief of Food Science and Human Wellness, and Editorial Board member of several international journals.
